personally, of what i understand is that exposure Time is what i set before taking the shot and Shutter Speed is the actual speed by the cam when shot taken.

This DoF is abit insufficient. The rest of the gang is not sharp enough ;p

The F no setting was F8.0..

Would F11.0 (which is the highest settting avaliable) helped improved the DoF?

Thats an interesting question, heres the answer (at page 41) one is the actual time and the other is the APEX time value :
