Quick question, are DMG files RPM files? Can I do rpm -U?

DMG are just disk images. YOu need to mount them to extract the apps within and close them after the extraction.

But like that means if let's say from iTunes 4.7.1 to 4.8 I must delete the 4.7.1 manually after installing 4.8?

No need to, usually if the same filename just overwrite. Tat is what i do when i get an updated software usually and so far no problems.
