Background paper - white or 18% gray?

I'm getting some 9' background paper for studio shooting.

Should I get the white or the 18% gray?

What would be the advantages and disadvantages of each?

Also, would a roll of black paper come in useful?

It shouldn't matter. Use the colours appropriate for your subject - there's no fixed rule as to whether white or 18% gray is better. Black can be useful as well, so are colours like blue, yellow, etc.
