I noticed that most times when shooting birds up in the bushes or trees, they are shaded so lighting is very poor. Flash is also out most instances. I opt to higher ISO and exposure compensation up to +2. Am I doing this right since it is my own trial and error?

Exposure compensation does nothing but adjust your exposure parameters up. It does not give you a real "boost" to the sensitivity. So if you are in A mode, EV +2 will actually lower your shutter speed by 2 stops. And if you are in shutter mode, EV+2 will open your aperture by 2 stops, that is if there is room to spare.
You might want to consider using flash, and a flash concentrator like the Better beamer.
