Take a look at the menu and etiquette involved in the humble street food and the refined restaurant cuisine. Learn about their differences and commonalities and how they have evolved over time.

Food is an inescapable Singaporean obsession. We have five or six meals a day and fierce debates on who cooks the best. We even drive the extra mile for irresistible dishes. But local food is much more than what we makan, and chiak – it is a living history, an ever-changing map and testimony to our cultural evolution.

This talk will look at Singaporean ‘foodways’ – our traditions, practices and recipes – as part of the glorious tapestry of Asian food and as a cornerstone of our national and personal identity. Enjoy a cooking demonstration of a local recipe with an international origin, and learn how you can do your part to save our culinary heritage.

About the speaker
Christopher Tan (www.foodfella.com) is an author, photographer and food consultant. His works appear in local and international publications, such as Saveur, The Straits Times, Appetite and Her World magazines. His most recent writings include Slurp, a collection of soup recipes, and the Singapore chapter of Inside the Southeast Asian Kitchen: Foodlores and Flavours, an ASEAN cookbook for which he also styled the photographs.

This crash course teaches you how to behave and eat right at your next Chinese fine dining outing. Learn the proper use of napkin and gain a better understanding of Chinese food and drink combination among others. Discover the art of Chinese cooking and food decoration, and their influences on Chinese dining as we explore the inner meanings of fine dining, the Chinese way.
