Tricky part is that the photostitch mode cannot set the exposure time. It goes into "Programmed AE" mode. So, the camera's choice of exposure time is not enough. Maybe can try doing an exposure compensation.
But I guess you can manually take the photos little bit at a time and hope that the photostitch software manages to stitch them together.
