Sugar Ice-ing between the shadows and light seems to make the picture pixelate, but I am sure its just the effects.
Whites are over-exposed on the top portions.
Shadows at the bottom.
Are you using a single direct light source?
Could have choosen a better piece of pork for the top one (the fats part a bit two color).
