I recently bought a zenitar fisheye lens from eBay. And it stated that it was a Pentax K mount. Bought the adapter to use it with my A7 but the zenitar mount didn't fit onto it. Surprisingly it fits onto my eos to m43 adapter. The only problem is there isn't any hinge or latch that can make the aperture ring usable.

Included is the picture with the lens mount. Do any of yall know what mount or adapter can I use so I fully utilise the lens?

If it's 2nd. hand then you are stuck with it but if seller has the complete lens mount range (zenitar distributor) you can ask to change. For alpha7 the lens mount is the E mount (aka Nex mount) Zenitar comes in Nex mount. The C in the photo can mean canon EOS since you said it can mount on EOS to M43.The next best thing is get EOS to Nex adapter and you can use on A7.

I doubt I will be able to change it cause it's not from the distributor. I will probably be buying another adapter but I believe there isn't any hinge or latch on the 'eos-nex' adapters right? Because that would mean I won't be able to change my aperture then.

There's a pin seen on the image. If you can depress it and held it down, then the aperture can be manually varied...

Yeah I did pressed it down and it changes aperture with no problem. The only problem I might have would be the adapter to use it on my NEX camera. All of the openings or mount of the eos adapters that I sourced doesn't have any lever or hinge to press the button. Thus my conclusion would be I won't be able to change apertures.

Unless of course I put a blue tack or something to just make it stay in place.

I'm not sure how the mechanical linkages work in an EOS EF lens as pictures or descriptions are hard to come by.Strange zenitar 16mm has a aperture pin but who knows.Maybe a autofocus adapter might work instead of the cheap manual adapters.Have a look at the pictures of Fotodiox's pro-ef-nex-auto-lens-adapter.There's also a pin at the EF lens mount side, wonder how it would match with the zenitar's pin.About US$100.
