A better way to get rid of the muddy taste is to keep it in a tank of fresh water for about a week. After that the muddy taste will be gone.

Koi very oliy and got lots of bone, tried before the wild one (river). Dun like. Bleah...
Someone told me the aquarium koi taste weird cos the kind of food the fish eat does not have enough variety, unlike what they have in the wild.
