Why do most photographers always aim the camera at off centre or somewhere lower first and shift back the camera to the centre when taking wedding dinner table group photo?

Its called focus lock and recompose, basically they want to achieve focus lock on the faces to ensure that they are in focus and then proceed on to taking the shot itself..

FLR - focus lock recompose was what old film users used, because only the central part of the viewfinder had a foicusing aid. Similarly, they use a similar technique to meter off-center subjects.

Some manufacturers very clearly state that they do not recommend FLR with modern AF DSLRs at distances closer than 15 feet, but to select an appropriate focusing AF point instead, but old habits die hard.

Who is the star in a wedding dinner table group photo? So you know where to fucos now?
It is faster to focus lock and recompose than changing the focus point. Dont let your cam decide where to focus lah.
Set to M mode F5.6 1/60 or 1/125 with external flash.

usually i'd just set the centre point to focus. Much faster and more accurate for me.
