1) plug ins, either foc or commercial, you have to pay for the latter - these do not give you much control, but you can click click click until you happy i happy everybody happy
2) channel mixer - my preferred method, you choose the tones that GIVE YOU WHAT YOU WANT TO SHOW, most people are just going to use desaturate (which is.. well 3)
3) desaturate - most nonsensical method ever
4) gradient map - almost as bad as desaturate, since you only have one result if you use black to white
I don't think this is accurate, though. Gradient map can have a lot of variations including toning, and you can instantly determine your black and white points as well using one adjustment layer.
CS4's B&W adjustment layer took over Channel Mixer's reign as well with LR-like CMY as well as RGB adjustments on-the-fly.
