Sign Mattes or Sign Photos?

I have some photos framed and hanging in a restaurant in the US. I’ve sold a few, but none of them were signed due to logistical reasons.

At this point, I have two choices: re-matte all of them with signed mattes, or reprint the images and sign on the image itself.

In your opinion would you choose to sign the mattes of would you sign the print itself?
