I recommend the Tamron 17-50 bring along also.
24-70 is 38-112 at 1.6 crop so may not be wide enough.
They are equally fast, since both are 2.8 constant max aperture. Problem is if they will work well in the setting you are looking to use them in.
For a 1.6x cropped camera 24-70 or 28-70 will be very restricting when you are taking weddings. Effectively your FOV at the widest end will be equivalent to 39mm and 45mm respectively. This will be insufficient for table shots. I recommend the Tamron 17-50/2.8, Sigma 18-50/2.8.
If you are using 2 cameras at the same time, dual 500D, you might be able to get away with the 24-70 on one body, and a UWA on another body. But personally, I would still go for the 17-50mm on one body and a fast 85mm prime (canon has an excellent 85/1.2) on the other body.
If you have a 18-50 range of lens...dont really need a 24-70 range for weddings unless you are using a full frame camera.
what i recommend is setup of Tamron 17-50 f2.8 and a Canon 50mm Mk2 f1.8 since it covers just about every shot normally taken during weddings. The 50mm at 35mm format will be 80mm which is just nice for portrait work.
If you are the primary photographer, dont really see a need for medium telephoto range.
fyi Sigma is 2 year warranty while tamron is 3 year warranty.

My sentiments exactly.. On crop the FF lens will nt giv u a wider coverage, so u get compromised on the wide end.. some food for thoughts?

if you do plan to shoot wedding , what are the things you need ?
1) flash
2) wide angle lens
3) batteries and memory cards
a good flash goes a long way. i'd prefer you go for the tamron 17-50 f2.8 as you can shoot a wider angle compared to the 2 lenses you mentioned. though it falls short at 50mm, you can compensate by going closer aka take 1-3steps forward to get that reach that you're missing from 50-70mm.

believe it or not.... most wedding photographers have similar kits or a variation in my experience. take for example Canon,
