Hmm, I still prefer IR clouds as the sky would be darkened and the clouds would be very white. This contrast helps to put emphasis on the clouds itself.
Usually I use P mode, Auto ISO.
If it does not turn out well, will set it to ISO 400.
Try to use a tripod, as the typical exposure would be around 1/2s.
And always try to shoot where the sun is behind U.
