For 8R prints, what is the optimum resolution?

Since you've already stated the PPI as 300.

The optimum resolution would be 8x300=2400 by 10x300=3000 pixels.

However, a 6MP 602 image cropped to 5:4 ratio is good enough for good 8R prints.(2660x2128@266PPI)
 

Wouldn't it be better if I cropped it to a 3:2 ratio? 3000x2000?

Well the image from a 602 is only 2832x2128.
8R is 8x10.

If you want 3:2 ratio then it would mean a 8RC 8x12.
