Age requirements, and psychomotor are some of the areas where the Air Force are significantly stricter than airlines. Also airlines require pilots to be above a certain age (iirc it's 26) whereas most air forces require them to be BELOW that age. The RAF is even stricter. All pilots upon receiving their wings must be BELOW 23 years of age before they begin conversion training (which takes approximately 2 years last I read).
So it's unlikely that a cadet pilot can choose to sign on in the Air Force. If anything it's usually the other way around.
