I have been reading up a little in library nowadays.

I understand that dynamic range for colour film is about 5 stops, B&W film about 8-9 stops.
And most digital camera has DR of about 5-8 stops.
Does that matter for B&W photography in digital?

Of course it matters. And FYI, some cameras are close to 10 stops DR already.

yes yes. the higher the DR, the more colour variants/depth can be captured, and thus when converted to B&W, you will have a more dynamic vs a flat image.

Oh really? The book I read was published in like 2007. The technology is moving so fast.....
