About not being seen...

How about this :

I go buy that SIGMA 50-500mm APO lens, then go hide somewhere and blast em from half a mile away?

Not a good way. Good street photography requires that you are a participant of the event/place. Shooting from a distance makes you an observer, or worse, a voyeur.

Ok, point taken, I should try then. How about a 180 degree fisheye - in sucks in the surrounding without having to point at subject... no?

Too much distortion. A 20mm or so wide angle at around f/5.6 or 8 should do the trick nicely.

Go for the pure 50mm if you want a 50, coz @ f/1.8 or 1.4, it's going to be a lot faster. But a 20mm will allow you to go close, squeeze of a couple of shots and get everything in without having to be that accurate in aiming. That's the idea behind using wides.
