Hi,

I just bought a Chinese baking Book (dun know no english words)
There are a few ingredient which i am not sure.

This HK book used alot of "Cake Oil" and "salad Oil"
I wonder any other ingredient can replace this?
And what is "small soda"

Sorry, Haze, can't help u much. Only know tat Salad oil can be found in cold storage(Shld b able to lah). My Senior ask mi to help. ;p :sweatsm:
 

eg. Green Tea Sponge cake (the cake look like those Sugar roller from Polar)

this receipe said need

300g of water
400g of Salad Oil
600g of Di Zi Mian Feng
6g Baking Powder
500g Egg yolk
1000g of Egg white
550 Sugar
10g Cream of Tar tar
5g Salt
35g of greentea powder.

Weird leh.. never need butter or magarine :dunno:
 

another eg.. cake name : GE GE DAN GUO

700g egg
350g sugar
3g salt
400g Di Zi Mian Fen
20g "cake oil"
75g water
80g salad oil
Some lemon essence
some Lemon 果 zan (this is to design the top of the cake to make strip)
 

tot u can use some help from staff of Poon Huat. i oni kno Ang Mo Kio Blk 422 & Admiralty MRT station there got. that shop sells almost everything (i guess:think: ) u need 4 baking.

oh, i dun bake, i jus eat wad my mum bake....;p ;p
 

There are poon huat at toa payoh.
They dun seem to speak mandrain..
and look -___- not friendly..
 

Salad Oil, I believe, refers to vegetable oil (direct translation from mandarin), which you can replace with soya bean oil or sunflower oil if you cannot find. The oil takes the place of butter/margarine...you don't want the green tea cake to smell of butter/margarine.

Small soda might be a reference to a pinch of baking soda? :dunno: The one that comes in small dark blue cardboard bottles.

alight at Aljunied MRT..

cross road over and walk to SHELL station..

the outlet should be behind the station..

Is that mean i can use magarine to replace the salad oil?
How about Cake oil?

I just took two pics and will ask someone to help me post here.. pls give me advice :)

That's the outlet that they have a kitchen with lecture room set up for conducting cake-baking lesson.

another shop outlet is at Hougang Central.

The answer is "No" :nono: for both questions.

Using margarine in place of oil will change the taste, smell, texture and color of the cake.

Cheese powder is so completely different from cream cheese that I can't imagine the results of substituting one for the other. :bsmilie:

Just visit one of the baking supply shops and talk to the people there. In every one I've been to the staff have been friendly and more than willing to advise, after all, it's more business for them.

dun liddat ler, not tt their job v glam. jus approach them 2 ask mah, but keep in mind tt not every staff tt knowledgeable. if they r tt gd in baking they'd likely b working somewhere else already. since u there might as well ask, dun waste ur trip there. :think:

u got any leftover 4 me? ;p
