What temperature? On average, a motor should be no more than 60C after flying. Best to buy one of those IR thermometers so measure it. Sometimes what you feel by touch is just normal.

No, the gimbal controller is designed to move the gimbal with the weight of the gopro attached. Not putting on the gopro will result in some severe twitching of the gimbal. If you don't need it, disconnect the power supply to it.
