What model to upgrade from D80?

I wouldnt consider the 3000 or 5000 series an upgrade eventhough they may be newer. For one thing, they lack an in-body motor so u are limited to AF-S lenses for auto focus. The 7000 series would be a more logical upgrade if u dont want to go full frame yet (not advisable for yr intended use...

    Newbie learning 35mm f1.8

The main advantage of the 35mm is its large aperture (f1.8) which allows u to shoot when the light is dim n u do not want to use flash for eg in an art gallery or museum. For landscapes, u will be better off with a wider angle lens n since u will likely shoot in good light, it's not as critical...

What if Canon kept the old 5D?

Not everyone needs a High-MP FF to print large posters or to crop heavily. To some, low-light capability is more important. The high MP of the MK II takes away a lot of the high-ISO advantage of the larger sensor leading to larger pixels since the pixel density of the Mk II is not much lower...

Any recommendations for camera shop in hong kong?

Try Man Shing or Wing Shing in Mongkok. They have lots of Nikon & Canon lenses. Both owned by same person so prices are the same.

Not sure about video but for photos, I have seen them in samples from ISO200. In ISO50, they are definitely not there. Have not seen ISO100 samples but I am guessing shd be quite safe.

Words of wisdom indeed! And yes, I hope the issues will get sorted out soon. Having a Canon will allow me to swap and try out lenses with my brother and friends.
