Both the G5 X Mark II and the G7 X Mark III have great focusing systems. I do not own either, but when I tried them out, absolutely loved the performance, especially since they are point-and-shoots.
I used both the EOS RP and the EOS R. Both are great cameras from Canon and so far, I have had no complaints. I want to use the M6 Mark II mirrorless as well. Heard it is great!
The best beginner's DSLR I have handled till now is the Canon EOS 250D. I was very happy with the results and it handles just as good as many advanced DSLRs out there.
I would recommend you either to rent new lens or buy a used one. You can rent out a few of the top lenses you want to consider, see for yourself how it handles and then buy a used lens. This is what I did when I bought my Canon 80D. i would advise you to try the same.
They announced it and it's available now. Both the cameras are mini-beasts perfect for enthusiasts. Canon has crammed them with a bunch-load of features. I will soon get my hands on one of this :)
Try getting a camera from the Canon PowerShot series. They have brilliant cameras (G5X Mark II, G7X Mark III etc) which are small, compact, point-and-shoot devices but are capable of reaching DSLR territory in the right hands and conditions.
