Can someone become an alcoholic overnight : No
Within a month : Yes but you have to drink a lot.. Almost every 2nd day or everyday and a lot of alcohol not just a single beer. Drink until you pass out. Mostly related to depression.
Alcoholism is a very serious issue and people should not confuse it with heavy drinking. Its when you become so dependent on alcohol that you will have withdrawal if you skip even a day like seizures, tremors or even hallucinations.
And I am pretty sure your friends will know about it if someone become alcoholic. A person drinking a beer, a wine glass or a glass of whiskey everyday is also not an alcoholic.
Example : Lemmy Kilmister a rockstar finishes a bottle a Jack Daniels a day. A true alcoholic.

If one consumes alcohol frequently and his body depends on alcohol because of it, I guess he is alcoholic regardless the time.
If close friends don't know, then it means they are not that close after all, or close friends are those bo chap types, or non attentive folks.
With apologies for being OOT but just want to reply to this comment. Not really. Some wife don't even know their husband continues to smoke. And the husband makes such a good job a hiding it (both the husband and wife are close and loving).
Disagree, there is an intention to 'hide', so closeness and lovingness has nothing to do with it.
You can never wake someone who pretends to be sleeping.
