Borrow a lens, ask the seller to bring a lens or ask someone with more experience to go with you.

And since you don't have a lens, it will be good to get a friend with one to go along with you, and hopefully he can help you check the camera too

Just out of curiosity: What sensor tests do you want to run? If you need neutral tests about noise then check the review sites.

Buy a body that come with a lens.

It would be best to be able to take some photos with the DSLR body just to make sure the critical functions are all right.
I suggest you invite your friend (who uses that same brand camera system, and thus has compatible lenses) along to do a reasonably meaningful test. That way you have some confidence when you part with your hard-earned cash
If you are not able to find a friend who can help in this way, I would advise you to purchase a DSLR with a lens together.

Why r u getting a body when you don't have any lenses? Suggest to go buy new body with kit lenses. At least can go out and take photos after charging the battery.

even seasoned photographers may not be able to fully 'test' the sensor...

U can get burnt sensors from laser shows (Laser Light Show Burns a DSLR Sensor), long or frequent exposure against direct sun etc.

for a piece of mind, suggest getting a new body from the shop.
