I believe the D lux 3 is also great for learning, in fact I will choose it over the GR. I always fancy a zoom lens over a prime for PnS.
Anyway i think the GR ain't much simple except for a prime 28mm lens rather than zoom if you compare the 2 using the same mode.

haven't tried the dlux.. but it the o/p is similar to the panasonic equivalent at high iso.. i rather take the gr-d... anyway, the gr-d isn't for everyone.. but it does force u to shoot in a way many other p&s can't..

from my little usage of GR, the noise level seems lower, but at the same time there is no stabiliser.
well.. noise is subjective.. the gr does a better job at the expense of noise where the panasonic/leica reduces noise at the expense of details (hence the water colour effect reported by some users) the gr noise is closer to grains (in high iso films) in my opinion.
i think the lack of stabliser is not realli a problem..its a matter of overcoming it with techniques.. here are a few examples which is shot in low light (mods, i dunno if i am allowed to post pics here.. if its against the rules, pls delete this post. thank you)

This is the longest i have ever tried.. 4 sec in a hunched position leaning against a lamp post
Neither, both are useful cameras in the sense that they posses some unique features not generally found in most cameras, but the awful low light performance and required photoshop manipulation will only inhibit you and make your learning curve steeper.
