Some of my first few macros with my Canon 100m...

Very noob photos, but still learning...

Any tips for plant / flower macros?
I have some questions for my macro shots...
1) I am having trouble with the Depth of Field... Wanna keep the entire leaf in focus but the DOF is too short that only part of the leaf is in focus (eg. #2)... I had tried to align the leaf and camera in the same plane but there is still some bokeh... Do I have to use software to blend the sharpest areas in multiple photos to achieve the sharp end result? Or is there any manipulations when taking the shot? I had tried increasing the aperture size, but I want to keep the background with good bokeh....

2) These photos are taken using tripod. Is it possible to take 1:1 magnification using handheld? any tips or guide I can refer to? I know of breathing technique and hand position, am I missing something else?
