First your questions.
First picture: even if you cropped it the main subject (judging from the pic) is still the sky and perhaps the water, so instead of cropping, you should had position your camera at the angle where there's lesser people (if there's possible), or straight out looking at the horizon

Second picture: yeah, cropping the people out would bring more attention to your main subject of the horizon, water, sand and sky (assuming that's your subject)

ahh...sand, water, beach view with nice blue sky...But no strong subject?

And the last picture would be more impactful if the dog's eyes was looking at the camera...

For first and second picture, maybe can down the aperture abit to show more details of the clouds? Just enough to show more details but not underexpose the whole picture of course...

Edited your pictures abit to what I feel I would do. Hope you don't mind and hope they are not too shabbily done.

Cropped the picture (sorry your signature is gone)
Increased exposure
Saturated colours of the sky

Increased exposure
Saturated colours of the sky
Cleaned up the shot for unwanted details
Cloned and filled in void left by the clouds

Can see some glitches on the PP skills cause done it in a giffy, but the ideas I'm trying to make are there so my two cents worth

Hey, no one was born with a camera in his hand...Don't say that your far from fair, just shoot more, and enjoy what you do

As for aperture, if your using auto mode, most probably the camera will set it to between f5.6 and f8? So maybe you can lower the aperture value to say f11? Just choose Av mode (Aperture Value / Aperture Priority mode. If your cam is a Canon brand that is ) But it's not a fast and hard rule, so just play around the aperture and even the shutter speed to get the image your looking for.

As for the dog, understand what your looking for, but the camera works differently from our naked eye, if you know what I mean

Hope to see more of your images! Ups for posting images here for us to C&C!
