    2- Image->Adjustment->desaturate
    3- Image ->Adjustment-> COlor Balance...
    4- Tweak Cyan/Red + Yellow/Blue channel....to taste....

    you might want to mess around with the dutone / tritone options as well... you can also get a sepia effect, but with more control over the shade of sepia.

    or even simpler, Menu>Effects>B/W or Sepia on your camera when u shoot

    Use ACDSee, edit mode press Sepia.. and save.. much simpler, or any imaging softwares u have just dig around for the sepia function

    Alternatively you can try out Digipix's method, from his tutorial,

    Personally, sometimes I'll convert the image to LAB, and delete the 2 channels instead, rather then just desaturate.
