Default Shooting in RAW mode

Since there's a higher bit-depth, does it mean, I have a higher dynamic range and hence can handle high-contrast shots more effectively?

1 stop head room doesn't mean straight away ur image will not clip at both ends, it will still clip, just that the hightlights and shadows which is clipped can still be recover back via levels/curve

raw also gives more options to adjust colors, contrast and less desstruction to the image when doing all ur manipulation... oni problem is the hugh file size, need to manage ur hard disk space...
