Default Pale snow white skin tone - how to achieve?

Been always have this problem of getting snow white skin tone but so far all the pics taken are orangy or reddish. Can any pros advise on how to get snow white skin tone on outdoor shoot without flash. Does decreasing the saturation helps? and how do i adjust my white balance to achieve the skin tone im looking for? Normally how do you guys do it? Need help Thanks.
