Both have their pros and cons:

    H9:
    - tilting LCD screen
    - Nightshot capability

    S5IS:
    - Slightly better picture quality than the H9

But for fashion photography, you'll probably need to go for a DSLR and a high-aperture prime or zoom lens, like a Sony A100, Canon 400D, Nikon D40x or D80.

I was using S5 IS before I switched to 40D.
S5 IS is really a good camera.
Easy to use, good quality, speedy, Super macro mode(1cm focus).

    Comparison
    S5 - having sharper images than H9
    S5 - Have Hot shoe while H9 doesn't.
S5 - LCD can be flip and twist, H9 can be tilted.
    S5 - having super macro mode(0cm) while H9 is 2cm
S5 - having AiAF TTL 9-point (with face detection, while H9 having Multi-point 3 area (selectable).
S5 - UsesAA batteries(Don't have to worry if your batteries run out, just go to a shop to buy 4 AA batts)
S5 - UsesSD Card(Cheaper than Pro Dual for sure)
    S5 - having a better white balance than H9
    S5 - having better IS than H9
S5 - having lesser distortion than H9 at higher zoom
    H9 - Faster burst than S5. 2.2fps while S5 is 1.5fps.
H9 - have better LCD Colour
    H9 - having slower shutter speed 30secs while S5 having 15secs
    H9 - having faster shutter speed of 1/4000 while S5 having 1/3200.
    H9 - having 32mb built in memory while S5 doesn't have any.
H9 - having more powerful internal flash with S5 internal flash

To compare with Canon and Sony alone, canon having specialised so many decades in cameras while Sony is quite new.
Maybe in future, Sony will be successful.

If you'll like to get a Canon DSLR in future, S5IS is a stepping stone for you.
Learn with those creative zone functions.

Overall, it's just my personal experience for these 2 cams.

But what I've hear from people is, Fuji's prosumer is good.
Not sure how true it is though.

Overall, all kind of prosumer are more of less similar in terms of their photo taking mode.

    Hope that's help.
