i suppose you'd have to take it in jpg form?

why not just take it in raw, then you have more control over everything, from toning to tone mapping to graduation, etc

Please READ YOUR MANUAL.
The information you require is on Page 95 to 97 of the K10D Operating Manual.

Thanks a lot~~

I know that. But still need to take a color pic then convert to B&W.

I mean no need of convert, just directly get a B&W pic from camera.

Maybe DSLR do not have this function.

why would you want to do that

when the camera does a b&w for you, it does it via its own algorithm and method
i would like to think that dslr user would want more control over whatever they are shooting, b&w has many many methods to achieve what effect you want, unless you really, really like what the camera does, which i suppose most of the time is a simple simple desaturate, one of the worst ways to create b&w from colour

it is probably precisely because of this that the camera people do not put it in
no demand, no supply, simple

I dream of a Camera with no bayer filter. Just a B&W sensor, no interpolation will be needed, quality will just be perfect, definition almost perfect.
