Default Auto Grey / White Balance?

Hi all just another friendly question.

If i shoot in jpeg mode, is there a possibility with CS2 that i can tweak the colour balance with one sampler button, just like the same when shooting with RAW mode in DPP?

Qn #2

Im using a 400D

Is it possible to select a 2s timer mode, besides the pre-set 10s mode?
Im asking besides the use of the remote control. thanks. cant seem to find it inside the manual.

I know Elements has this colour correction tool. CS2?? I think it's more manual and not a direct click and correct kinda adjustment.
