Using 400% DR?

I have been shooting using 400% DR in JPG format thinking that it would really help prevent highlights like the sky from getting blown, but I've noticed a lot of my shots appeared quite dull. After some reading it seems like using this setting incorrectly does indeed produce photos with less contrast.

For those who're consistently getting good results with your S3/S5, how do you decide when to use regular DR and when 400% would be better?
