5D probably holds it the best.
i think i read that even the 1 series can't hold its own against the 5D. 20/30D would come in a close second if you're not looking at the 1's. i'd also imagine that the 350/400D are 99% comparable with the 20/30D. in other words, Canon dSLR's hold their noise very well across the board. the only reason the 5D holds it slightly better is beacuse of the full frame sensor and some funky stuff that goes on behind that.

The 5D has a new sensor designed for it. Being a FF, it would be hard to compare any other model that a equal, except for the 1DS Mk2, which best the 5D slightly I think... read it somewhere.
As for the rest of the model the 30D has a very good noise control. That say the 400D has improvement done to it noise level control when it replaced the 350D. The 400D ISO 1600 is very usable Most of the latest canon model has very commentable noise control. By asking question about noise, can I assume that you take lots of low lights photos ? If yes, then the 5D is an excellent choice. The 30D and the 400D can perform just as good, but not near 5D of course... hence the cost New model should be out soon, if not in a hurry might want to wait till next month or so for the annoucement of new cam... Hope this helps.. |

30D's noise control is, like all the Canon DSLR lineup, very good.
However at certain ISO stops (can't remember which), you may notice some banding. I did, but it doesn't really affect the pic too much. Just quickly changed settings and re-shot. |

i use a 5D and 20D extensively. Both are very useable at ISO1600, but risky at ISO3200, depending on exposure. Both have banding when underexposed too much.
In other words, they're pretty much the same across the board. |

a 10D/20D/30D/350D/400D's noise is very well controlled unless u pixel peep.
you can shoot at ISO 1600 and print at 4R and still not see much noise. even S8R is acceptable.

Here's a noise comparison for the 5D and some other cameras.
http://www.dpreview.com/reviews/canoneos5d/page21.asp Look at the "Luminance noise graph (just Canon, zoomed)". You'll see there's really not much between the 5D, 20D (same as 30D) and 1DsMkII.
