None of the big chains. They pretend to be gourmet coffee, but... sigh. Impossible to get proper gourmet coffee in Singapore. I buy coffee beans from Coffee Club and other places and make my own in my espresso machine. The only coffee I will pay for is kopi.
Still prefer the authentic asian kopi ah. Not some gourmet ****.

I would go to fanciful cafes for moments i need to hold biz or social conversations or just to do my work. Kopitiam is a good'o favorite as the coffee is different from the western ones.
Local coffee goes through a special process to create a certain flavour. In the process of roasting, additives like salt, magarine, corn oil, butter (and whatever food substance that create a unique taste) are used. Hence, dark concentrated coffee which yields a bitter/sour after-taste makes it a Singapore/Malaysia coffee.
Skill to brew coffee is another soft art be it a western barista or a local coffee shop uncle/auntie. Water temperature, freshness of beans/powder, timings, and even the age of the filter (socks) make quite a bit of differences.
Gone are the days where a good kopitiam roast their own beans (perhaps a common sight in the 60s). Presenty, beans are mostly pre-prepared to cater to mass market by manufacturers. With economies of scale, better profits can be realised.
The trend will continue to change, but the die hard kopitiam is here to stay. Different coffee, different customers. It really isn't about price anymore.
Starbucks for me, the coffee is still better at the price.
But if I were to go for quality and heck the price, then it's Blue mountain at TCC for me.
I brew my own using a Saeco machine... other than the missing atmosphere you get from going out, its a million times better once you tune in your preference (type of beans, temperature, dosage, etc).

Best is still Yakun and Killiney Road Kopitiam (The original outlet for Killiney taste best though). A lot of the mama kopi also shiok. Taste better than Starbuck and other outlets.
i think there is a yakun at the cathy cinema (picture house), there is a poster that roughly say:
"forget about the french press, we got the socks"
still preferr the 70cents coffee.

My list of favourite Coffee haunts are:
Workday morning, teabreaks - Kopi at somerset coffeeshop next to workplace
Yakun - at least once a week for the ambience and friendly aunties who dotes on my 2 yr old daughter, and of course the great kopi
Coffeebean - like its salmon sandwich more, but coffee is ok
God bro's home made coffee - best all around...

Yakun for me! Kiliney cannot quite make it. There's also a secret teh place.
Spinelli's is the best fake gourmet latte. Everywhere else, can only drink their normal brew black. The only thing good about coffeebean is the cakes.
