I couldn't for my case, was not armed with super wide lens so had to use poor man's 'wide lens' via stiching .
If used polorizer would have uneven color shifts around the sitched area.

Did not know that you cannot use a polariser for multi shot panos.

The colours of the sky and lake are really intense. New Zealand is really a nice place to go take photos.

I like your shots. Reminds me of Lake Tekapo. BTW, just a techie question: if the skies are so blue as shown in your photos, should you be using a polarising filter? I've been told that with the use of a CPL, the skies will turn almost black. Any comments?

eh, I'm no expert here.. but it doesn't turn the blue skies to black at all but rather 'darkens' the blues. It really depends on what u want the final outcome to be, to use or not to use.
I noticed the clouds tend to stand out fluffier in the blue skies with CPL on.

toomz, one question. For all the shots that you took for the pano, did you use the same setting throughout? (ie. same shutter and aperture settings to maintain the same exposure?)

Right on, set to manual and did consecutive shots.
