great. how do u do this? seen a few people post pics like this where the colour of one object is retained and the rest is black and white or sepia.

There are many ways to do this, basically using selections to select the area(s) you want to convert to b&w/sepia while keeping the main *unselected* subject untouched.

another easy way is just use history brush...

Another not that easy way is to create another layer of the picture in Photoshop, then convert the top layer to monochrome. After that, use the Eraser tool, to "reveal" the colors.
